i made pancakes this morning. i've cut refined sugar out of my diet, gulp, for the most part so i've been substituting honey for these adventures. to varied results. the breakdown was like 1/2 a cup of honey for every called for cup of sugar. three cups of sugar were needed. i barely had enough honey for one cup and all the while i was thinking that that was a lot of honey already. and for the life of me, i cannot stiffen egg whites. not gonna break out wife's mixer. help?
