In Iran, why are the crazy ayatollahs considered to be "conservatives"? And why is the Iranian opposition (what little there is) considered to be "liberal"? The left always labels the bad guys conservative and the good guys liberal.

The situation actually should be reversed. Conservatives favor small, limited government that ensures as much freedom as possible. In Iran, that would be the position of the opposition (and similar to Iran under the Shah). Liberals favor a strong, authoritarian government. In Iran, that would equate to the current regime.
