I don't really see a problem with this. In high school we did it a little differently. We had a few Muslim and Jewish kids that took their holidays off and they weren't counted absent. That seemed to suffice and I've heard no complaints about it.

Muslims: We want schools closed on our holidays
In Mobile County, Alabama, we got Monday-Wednesday off during Mardi Gras week in public schools. The private school I went to (which officially was secular) for grades 6-12 gave the whole week. The Catholic schools went back on Ash Wednesday and had Mass during school.

I know during the 1980s and at least part of the 1990s, the University of South Alabama did not take Martin Luther King day off because of having to fit both Mardi Gras and Spring Break. USA was on the quarter system at the time so I suspect that changed by the time they went to the semester system.
