I love seafood, hard to get real fresh seafood in West Virginia. I do eat a lot of Rainbow Trout and some Catfish and some Frog Legs too. I do my own boil with Shrimp, Crab (usually whatever is available - i've even used Blue Crab), Corn, Sausage, Potatoes, onion and seasoning. Probably not as good as what ya'll make, but I try.

A good friend of mine is from Louisiana and her family owns Paradise Catfish Kitchen in Ball Louisiana.
Oh my. Just some friendly advice: Ball is in Rapides Parish (Alexandria, La). To Cajuns you might as well be in West Virginia, lol.

I think I might have been a bit too snarky in this post, so let me try to clarify a bit:

In today’s world, you can no doubt find any kind of cuisine just about anywhere in the world. Some of it may just be a darned good representation of that cuisine.

I guess the point I was trying to make is that unless you are at the source, don’t think you are necessarily getting the real thing. Fresh from the field, water, ground, prepared by folk with generations of history behind them, makes all the difference in the world.

So, if you are from another area of the country, and are close enough to Acadiana as Ball, try to make the extra effort to drive an hour or so south and get the real deal. I promise you will absolutely not regret it!

Btw, I also did a quick search and found out that there are a few ‘cajun’ restaurants in WV. (Of course, there are also Popeye’s everywhere lol, and besides great chix, their rice dressing ain’t 1/2 bad!). I have no idea of how good/authentic they are, just found it relevant to this conversation:

Gumbo Stop is in Huntington. There is also Jewel City Seafood in Huntington.

It is the season now. Just expensive. I have had them several times already starting a month ago.

Search the Crawfish House in Ocean Springs, MS on Facebook. Very close to my house. I prefer blue crabs, but they have been scarce this season.

Actually, true Cajuns do put a variety of extras in boils. And carrots are not uncommon. In the boils I've done, over several decades, besides shrimp, crawfish, or crabs, I've included onions, potatoes, sausage, mushrooms, garlic, and carrots. It's not uncommon to include lemons and other green vegetables such as broccoli and brussel sprouts. The trick to incorporating these items is when each item goes in. To early, some vegetables get mushy and too late and under cooked. The same for the crustaceans.

How do u keep all that from rolling off the table. Brussels sprouts in a boil does sound awefully good as well. More vegetables the better

The 1 x 4 "sideplanks" help with that. My son puts asparagus in also. Its pretty good

Do you know someone that makes those tables. I want to get one.

Looking at the neat peeling tables already posted piqued my interest. There has been some real improvements made to them recently. Kinda wild, as it amazes me how popular crawfish boiling has gotten in just my lifetime. Used to be something kind of rare, and done at home. Now there are tons of restaurants everywhere serving it, etc.

Anyway, here are a few of what I think are great ones that I happened to find:”

There are even some cool ones you can buy on-line:

Of course, this how many of us still do it, though it is getting harder and harder to find paper newspaper, lol:

Wow. Could you be anymore full of yourself? Fresh from the source, lol. I didn't know that catfish, crawfish, etc. only came from the Acadiana parishes. Thanks for the enlightenment, FrankyP. That's very arrogant to think only your culture holds the magical key to cooking Cajun food. Especially when that food was influenced by West African, French and Spanish cooking techniques. So, by your logic if you want real deal Cajun food you need to skip Acadiana all together and get it from West Africa, France or Spain.
Your hatred of me is seemingly all-consuming and unending. But unlike you, I will not ruin this thread further by getting into a back-in-forth with you.

I’m sure most people (unlike you) can see that my post was not about me, and can easily understand the point I was making.

But I do have to say that no, don’t go to WA, France or Spain and look for Cajun culture. The whole point of Cajun culture is that is a unique in that it blends food/culture/traditions from all 3 of those places and probably more.

I don't hate you FrankyP. Just feel sorry for you. Hopefully you'll get the help you need and quit posting about "laturd" at 3 am in the morning. But let's not ruin this thread anymore. Here's some comedy to lighten the mood for everyone.

Yep, they are.

I’ve actually considered getting one, but storage was the issue. Not sure it’s worth it for using it 3-4 times a year. What I wanted was one that folded, or otherwise was easy to store, but couldn’t find one that wasn’t more money than I was willing to part with, lol.

But I love that my best friend, and a couple of other family members have them, so I get lots of usage of them. Plus, most of the local restaurants now have them, so that it is nice as well.

Until you have pulled up that triangle net with a broom stick in a flooded rice field to find a water moccasin you have not crawfished. Running like a screaming girl in hip boots is not easy.

I was talking with my wife about possibly getting a boat as we live on the Gulf. She put it in the same context as you. How many days could you possibly use it? I would never be able to go out during the week and I wouldn't bring it out when it is cold. Our kids have tons of events. We came up with we would only be able to use it about 10 days of the year and 50 or 60k purchase just wouldn't be worth. Plus they are a money pit. As of last night I am not getting a boat. Still might consider the crawfish table even with just 3 or 4 days of usage. Haha

Yes, because there's certainly no Cajuns in Rapides Parish.01-wingedeagle It only sits right above the Acadiana parishes. And only Cajuns know how to cook seafood. 01-wingedeagle
Worst gumbo I've ever eaten was made by a Cajun. Best crawfish I've ever eaten was in Webster Parish which is in Northwest Louisiana. Don't let Franky fool you. There's good food all over Louisiana not just in the Acadiana Parishes.
Best Cajun restaurant is called Bayou and it’s in Salt Lake City.

and you haven't seen a FOR SALE going up any quicker than this homeowner

A Texas homeowner who reported seeing “a few” snakes under his home actually had dozens of rattlesnakes living beneath his house.
Big Country Snake Removal, which was called in to help, said the homeowner crawled underneath his home after strong winds disrupted his cable television service. He saw a few snakes, quickly crawled out and contacted the snake removal company.
Workers later pulled 45 rattlesnakes from underneath the home

No I do not do snakes and I grew up in Vernilion Parish. I fished along canals. I duck hunted in the marsh. I still am terrified of snakes.

Haha

When I lived in Louisiana I owned and used my boat quite a bit and justified the cost. Now, can't justify owning one for some of the same reasons you noted. However, you might be surprised to find how many boats you can find that rent by the hour, day, week, etc. We rent a few times a year and at the end of the day, no storage, no insurance, no upkeep.

I wouldn't say I'm terrified of them.. Just not a fan..

Nothing like being in Venice, LA.. Smoking a Marlboro Red, walking floating pipe in the MS River and on one side a gator pops up and as your turning around a Cotton Mouth pops his head up and tries to get on the pipe.. Good f'n times

Spent my elementary years in Port Sulpher. Played a lot of Pee wee football at the fort in Boothville- Venice. Now I think they all go to South Plaquemine.
