Historically I'd say Louisville is the biggest basketball rival. UAB was up there for a bit in both sports. Not sure we play old piss/miss-stake on a regular enough basis to qualify as true rivals.
We haven’t had a rival in maybe 25 years. Probably longer if you’re talking about football. Conference realignment killed it. Who is Nebraska’s rival now ? Penn State’s ? Pitt? Georgia Tech?

If rival you mean, you’d give a certain body part to score a victory over said team, I’d go with this list:
1.University of Tennessee (any sport, any venue, any time)
2. Louisville
3. Kansas (even though we’ve played them only a few times)
4. Cincinnati
5. Mississippi
6. Mississippi State
5. Kentucky (same an No. 3)
6. Tulsa
7. BYU (because if that dang altercation after the football game)
8. Whatever team Tubby Smith is coaching
9. SMU
10. Temple

In my opinion, for there to be a rivalry BOTH schools have to consider it a rivalry. I know there are some schools we consider to be our rivals and other schools that consider us rivals (Ark St for instance) but are there any that we both agree we are rivals?
FB - UTK & OM would be instant, forever rivals if they would play us annually. Probably same for AR. But since none of this teams will, it's Cincy, UH & UCF until they leave for greener pastures. After that it will probably be SMU & UAB.
In MBB, UTK, Louisville & UK would be instant rivals if they would play us annually. Since they won't UH, WSU & Cincy as long as we are playing them annually, then probably WSU, UAB & SMU.

Agree.
That is why Tennessee is interesting.
Their three biggest rivals Bama, Florida, Georgia all have other teams they hate worse.
Bama has Auburn.
Georgia has Florida, Tech, and actually maybe Clemson as much as they've played.
Florida has LSU, Georgia, and FSU.
I guess UK wants UTk as their rival in FB, but UTk is reluctant to embrace that.
Memphis is the same in that we want to punch up for our rivals (OM, Ville, UTk) but we laugh at the schools who want to punch up to us (Arky State, UAB)

Good point. It did feel pretty good to clownstomp Kansas in football a few years ago after the 2008 soul-crushing.
