For NC you could consider Jim "Catfish" Hunter, Roman Gabriel, and Julius Peppers
Sylvester Ritter better than all of those guys.

I know we Tech fans sound like real homers on this thread but Malone, Bradshaw and Dean are probably better than any 3 Louisiana born players than even LSU can come up with.

For Alabama, I'm surprised you guys are listing Bo Jackson in a second tier. It didn't ask for the most accomplished.
I'm not sure there was a greater athlete of his time and perhaps of all time than Bo Jackson.
