Not sure of the logic built into their system but the scores (while odd) do seem to be similar to what actually happens a majority of the time. If you do the single game simulations instead of 100 you will get the odd balls like Central Arkansas holding you to less than 63 points.

I statted up the entire SBC as D&D characters and played out the season using a series of random tables. Forgot to keep track of records, but Penny Hart is now a level 4 paladin with a +3 broadsword and over 3000 gold pieces.

Now, that got me curious about other games that have already taken place. Here's what the simulator showed me about a few of our games from last year that I'd either like to have back OR be glad to relive at some point.

Liberty(2015) wins 62 of 100 matchups against Georgia State(2015)
Georgia Southern(2015) wins 100 of 100 matchups against Georgia State(2015)
