RE: OT: America's best BBQ
People try to lump BBQ into one big category, and it's really not fair.
Comparing Texas BBQ to NC BBQ is an act of lunacy... Two different meats, two different styles of cooking, and two different sauces (probably sides too).
Now, best Brisket? Best Pork? Those are comparable.
Bottom line: Damn yankees trying to simplify 14 different art forms.

I can personally vouch for the 2 places listed from St. Louis...Pappy's and Bogart's are great...I'd add a 3rd St. Louis joint called Adam's Smokehouse...Bogart's and Adam's are pretty much the offspring of Pappy's...pretty much Memphis style ribs with a little twist...and the brisket at Pappy's is great...the smoked pastrami at Bogart's is great too...but all 3 have some of the best ribs you'll ever eat.

Their pulled pork is average at best if MWSH were in the Triangle or farther east. Although they do make the best cream corn I've ever had in a restaurant.

They serve their sauce on the side like it should be. If you have really good Q you don't need much sauce at all. Just a little for dippin.
I love Heirloom and work down the street, but I don't know if I'd call it traditional barbecue. I just wish they'd find another building.

What about #1 Tennessee not having any any in the top ten?
Memphis is one of the BBQ capitals of the World and has the largest BBQ festival too. Plenty of good options from there.

I ate at a little place in Townsend, Tenn that had really good bbq. I didn't care much for the sauce but they cook it without sauce and let you choose. Also had smoked bbq in Wingate, NC that was really good. They also let you choose your sauce.
But being from Eastern NC, I prefer what I grew up with. I suppose most of us are that way.

Technically, BBQ, aka barbeque, is the style of cooking meats. It can be pig, beef, turkey, and other meats.
Chili is technically a stew containing meat and chili peppers, often with tomatoes and beans.
Those are the facts.
As far as what's better, barbeque pork and chili with beans are what people with taste buds prefer.
Every true Southerner knows barbeque is a noun, not a verb....
One thig is for certain, the contraption one uses to achieve the end result of said BBQ is a grill, smoker or a pit. It breaks my heart for someone say they are BBQing when in reality they are simply grilling steaks, or even worse, hotdogs and hamburgers.

Tired ass brisket don't do it for me like Pork does.
Although Gatlin's in Houston does do a very nice brisket.
In Mobile, the Brick Pit (near USA) does good pork BBQ

People who get into the pork vs. beef BBQ generally don't know what they are talking about and generally have never run their own pit. It's meat. It's all good. And when I am up 14 hours smoking meat I don't care if it's a pork butt or brisket.
