If you cannot book a hotel room in Greenville I would suggest booking a room at the Sheraton in New Bern; wonderful hotel on the waterfront and great restuarants within walking distance. It is about a 45 minute drive to Greenville on non-game days but it is mostly 2 lane roads whereas Washington and Wilson are four lane limited access highways. The airport use to have connecting flights to the major airports in Charlotte and RDU (20+ year old information) but it is close to the hotel and downtown New Bern.

Sadly, you won't find many 4 star hotels and barely any 3-star hotels. But some of the hotels are pretty nice.
Candlewood Suites is the newest hotel in Greenville, only rated as a 2-star hotel, but it's still quite nice.
There is a nice Courtyard Marriot in the city near the hospital, along with a Holiday Inn Express that is pretty nice.
Hampton Inn near the convention center is recommended as well.
I do recommend getting a room early so that you do not have to get a hotel in a surrounding city that is 20-30 minutes from the city of Greenville.
All the Restaurant recommendations so far have been great.
If you want something nice and fried...you have to try Bojangles. Some of the Best fried chicken, biscuits, and sides that you will have. It's a chain, but it's "our" (Eastern NC's) chain. They serve Breakfast biscuits all day long. Bojangles is synonymous with Tailgating before games. They have "Tailgate" specials that gives you chicken, sides, biscuits, and tea for the big games.
There is another place called Cookout that is an NC based chain. Great burgers, hot dogs. Home of THE best Milkshakes in the United States. This place is either walk-up or drive-thru only. Their specialty combos are called "trays" and you can get your burger,dog, or sandwich and 2 sides and a drink, milkshake, or float for under 6 bucks. It's the only place I know that will let you get sides that are an entree by itself (Corn dogs, Quesadillas , Chili, Chicken Nuggets, etc.)
I would also recommend visiting Washington, NC. It's a great waterfront town about 20 minutes east of Greenville.

Its a tradition on Friday's before ECU home games. Music, booze, food, activities for the kiddos if you have any. Good fun and you can stay out in UpTown afterwards if you're froggy.
