In the case of a tie
Ok so, obviously Texas State is new to the Sun Belt so I'm not familiar with how things work in regards to a tie. Say there are 2 teams tied for 2nd place in the conference. Who gets the bowl invite? Does it go to whoever owns the head to head win? Or is it completely up to the bowl selection committee and the Sun Belt as to who goes?

Completely up to the bowl selection committee. MTSU didn't get to go last year IIRC.

There is no tiebreaker in the Sun Belt. If you tie for the title, you are both declared champions, and the head to head winner gets a guaranteed bowl. If you tie for 2nd, you must hope that a bowl likes you better than all the other teams.
MTSU and ASU played in a defacto league title game to end last year, and MTSU lost the game and then got left out of a bowl while WKU, ULL, and ULM teams who finished tied with them in the standings all got a bowl game.

1) Win the SBC Championship
2) Be the Ragin' Cajuns and be bowl eligible

So if ULM wins the next two games and beats ULL, then ULM is guaranteed a bowl slot even though we would be co-champs correct?

Yes, in fact this is the only scearnio right now in which the Go Daddy's bowl choice would be locked up. ULM is the only team other than the Cajuns that controls their own destiny in league.
If the Warhawks lose any of their next three...we can go ahead and etch the Cajuns name in the trophy.

You are right, Auburn is 7-1 right now with an easy win over Arkansas upcoming. Miss State has 4 wins and just barely beat Kentucky at home. They will need to beat Arkansas and one other team just to get bowl eligible.
Mississippi State is most certainly not Auburn.

MSU is run by a bunch of idiots, so it wouldn't surprise me. That program is going nowhere fast.
Simple economics. MSU has the second lowest budget in the SEC. Mullen has a buyout that would cost them around $6,000,000 this year. While Texas or Alabama, or even LSU or Tennessee would throw that amount away in a heartbeat to get rid of an unsuccessful coach; State will not, especially when he is not that far removed from a couple of pretty good [by State standards] years. Plus the very real possibility of some NCAA sanctions makes the job less attractive to incoming coaches, as well as the regrettable fact that the 'Dawgs are in the SEC West, where winning the division with a $50,000,000 budget is about as likely as Obama registering as a Tea Party candidate.
