I smoked a fatty not long ago..

I took a pound of bacon, weaved them up, and flattened out a lb and a half of hamburger.. Put some pickles, cheese, and mustard with some S&P, rolled it all up.. Put it on the smoker for a couple of hours until the bacon crisped up.. Cut it up and ate it. I took pics but don't feel like uploading them somewhere and posting.

OK Joe's in KC (known for their burnt ends, but I'll stick with the basic pulled pork)
Q39 in KC (brisket is fantastic)

Jack's Stack is supposed to be up there with those two, but I don't like it nearly as much. They serve the sauce in those little cup things instead of a squirt bottle like it should be.

That looks evil and like a trap.
It's actually not bad.. I was doing keto at the time so a good greasy burger sounded great. The only problem I had was the leftovers didn't warm up as nicely as I had hoped. It's definitely something you eat after removing from the smoker.

Have in laws in KC. We went on two different Family-created BBQ tours two different years.

Joe’s is by far my favorite, but I’m a huge burnt ends and pulled pork fan.
Gate’s, Q39, Slaps and Jack Stack are great too
Arthur Bryant is historical but meh.

O.K. Joe's (I think now it's K.C. Joe's) is the best in KC that I've tried - well, three, strangely enough noted here... Jack Stacks was very good, too...
BUT, we hit Arthur Bryant's one time and not sure if was the wrong day or something... but it was NOT good at all... meat had NO 'work' done to it (i.e., fat wads and gristle throughout) - and everything else was 'meh'... our folks in K.C. said they closed it for renovations not long after our visit...hopefully got things in order, as it HAS to be better than what we had that day...

...Birmingham 'cue is somewhat unique, and a bit of 'hybrid' of styles - even a bit of Greek influence, as many of the restaurants in town are Greek-owned-operated...
My overall favorite 'chain' here is Jim and Nick's, but Full Moon is great too, and perhaps more 'consistent'...

Dreamland is the rib joint that started in T-town, but is now all thru the region... typically great ribs, with a sauce that has some decent 'heat' to it... just had a few racks from the original joint in Tuscaloosa - an actual converted house - had dirt floors at one point...

Of course, there are gobs of 'one location' BBQ joints of note in the area, too many to sort out here...

...all that to say, we are ready to grab the BONES trophy back from Memphis in '23!!! 04-rock

...the only time I had 'Cue in Texas was in Fort Worth - we were visiting folks out there and they took us to a joint that was basically a converted mobile home (exact name and place - I have NO idea)... the first true brisket I had had, and was superb... my wife prefers brisket to 'pig', but I'm down with ALL of it! 04-rock
