I've had gumbo in New Orleans.. I've had it in Birminham, AL.. I've had folks from back home cook it.. I've ate it on a tugboat in NY prepared by the Tug captain who's first language was Cajun French and his second was English.. I've had it in Montgomery, AL made by a man from Lafayette...

The one thing I'll say is this.. No two people start, cook, or finish it the same.. No two gumbos taste exactly the same...

I'm not one to say who's was better or who's was worse either.. The tug captain's was by far the best..

Who doesn't add some mustard into the mayo base?

What is really different is I know some Avoyelles Parish Cajuns who never have gumbo without a sweet potato on the side.

Depends on my mood if I put potato salad in my bowl or off to the side, but a slice of french bread is a must for me. Dunk that beautiful bastard into that gumbo juice, oh my lord.

I did this. Baked my own bread with rosemary from the herb garden. Sliced a piece and toasted it in a skillet with butter. Dunking that in those juices was pretty damned heavenly. I do the same when I make fish stew.

Wife has gluten issues. Made a pot tonight. For being gluten free it was rather good.

I’ve used Cup4cup to make roux and rice flour to make it. This is far better.
