IMO, the spread offense started crazy the year before "the MAC" (2003).

That is what got everything going, and that's what got Urban Meyer going sweet (losing to MI-OH+Roth; only conference he did NOT win as a bouncing coach).

And it's what made the mid-majors join the bowls big. Following year in 2003 -- NIU beats ranked Maryland (ex-gf moved there right then; her bf at time smashed everything as she called me - why? dunno, but awesome) -- then NIU beats ranked ALABAMA, then Iowa State (okay, happens obviously but still) -- then Toledo beats ranked Pitt in an awesome comeback in Toledo which was at the time difficult for Anyone to win at -- and the list goes on.

Point being, the MAC set the record of a conference's wins over power conferences (6 at the time then, btw) -- even among other power conferences! AMAZING!

The spread offense did it. Honestly. It really was. I am still pissed about NIU instigating the shutdown of the MAC which lead to B10/P12/MW -- then reverting -- but wow. NIU did not go to a bowl that year. They should have. That's what made them realize "Something's Up." Especially Ranked NIU vs Ranked BGSU on GameDay that year.
