It's the Mexican food in the Southern New Mexico. The Hatch Valley and the Mesilla Valley to the south where Las Cruces is located produce some of the best (if not the best) green chilé in the world. But Hatch Green Chile in the signature chilé. Also, Southern New Mexico has a lot of pecan orchards (one of the largest in the world) and is growing in the amount of vineyards and wineries.

No lies detected here. I didn't know there was a difference between the two until a friend took me to the Carlsbad Tavern restaurant in Scottsdale, AZ. I've never been to Southern NM, but after that meal it was abundantly clear after they know food. Some of the best flavor in food I've ever had in AZ.

Here is my question. WHY(really-why) is EAST TENNESSEE STATE able to pay more than NMSU ? Is NMSU support that weak?

We averaged 2000 more people a game than ETSU. Ive been around the program forever. I still don't know why we are broke. Are support is decent, lots better than most schools who pay their coaches a lot more than we do.

*Southwestern* food..spills over to AZ as well.

Mexican Food
New Mexican Food
Tex-Mex (catch all for "southwestern food")

Nah, I'm from Texas, frequent NM, and live in Arizona. Tex-Mex is its own thing entirely.

Its been my experience, Arizona and California make a Baja style of Mexican food using fish, shrimp, cilantro, and green tomatillo sauce (in lieu of green chile) in that cuisine. Tex-Mex uses ranch chili beans, black beans, chili con carne; leaner cuts of meat are used in this cuisine. Northern Mexican food uses more chicken, pork, and the fattier cuts of beef. i.e. Caldo de Res, Pozolé, Menudo, Molé, fideos, carne asada carne adovada, Machaca, etc. etc. And, New Mexico food is a combination of Northern Mexican food infused with the local Indian foods; Maize (corn), wheats (flour), green chile, sopapillas, cumino (spice), biscochitos.

I also feel like I need to share this story here.
I grew up in Western NY, and went to NMSU sight unseen. I was taken out to dinner at a restaurant that was right across from campus called The Hacienda (I know, that is a dumb name). My experience with Mexican food was Tacos. I had no idea what to order, so a friend suggested Navajo Taco's. Which are great!

I was then asked, the question "Red or Green?" My answer was "Red or Green what?" They all looked at me like I was crazy and said "Chili!" In my mind, chili had kidney beans, hamburger meat, etc. Who in the world would want green of that? That would be full of mold. So, I replied "Red."

The staff brought out the food, and they put the Navajo Taco in front of me, then a bowl that looked like tomato paste. I moved that to the side and then ate the Navajo taco, it was amazing. When I finished, I then took the bowl and put it front of me. I took the spoon, stirred it up a little bit, and wondered where the beans, etc were. I figured that maybe NM chili is a little different. So I got a big spoon and put it in my mouth. I should have noticed that conversation had stopped at the table, everyone was watching me. They were all thinking that I had an idea about what I was about to do, nope.

This was me:
[Image: chili-mouth-fire-flames-coming-out-its-51118643.jpg]

The staff was at my chair in about 5 min with bread and milk, they too saw what was about to happen and were prepared. Needless to say, I learned my lesson. By the way, the answer is Green.

Awesome story man, I enjoyed it.

If Jans goes to ETSU it will speak volumes-- unless he has some big personal reason to go.

The biggest indicator of Tex-Mex is ground beef, and lots of it. Let's face it, a mishmash of Northern Mexican, New Mexican, and yes, even Baja style can be found throughout the southwest and Colorado. Nothing like a shrimp and cabbage green chili burro served enchilada style!

So......who out there is available and worthy of replacing him? And more importantly, is NMSU willing to pay him, whoever it may be?

If Jans left, I suspect the new hire would actually make less than him. A big part of his bonus is paid by a consortium of private donors that specifically put up the money for Jans.

As far as replacements, I'm not going to even speculate. I still can't wrap my head around Jans even entertaining the thought of going to ETSU. It makes no sense to me, even if he got $100-200k more per year.

I looked it up; Jans is NMSUs 5th coach since 1997. That's 5 coaches in 23 years, avg. tenure a little under 5 years/coach, with Menzies and Weir being massive outliers. Law of averages say he's gonna skedaddle.

Yes but...

Neil McCarthy was fired due to NCAA violations
Lou Henson retired due to cancer
Reggie Theus took the Sacramento Kings job; 7-figure job.
Menzies took the UNLV job; much deeper pockets.
Paul Weir took the UNM job; somewhat deeper pockets.
And... Chris Jans is considering the ETSU job?????

Things like this usually don"t go public unless Jans and his crew want it to. He's either driving up potential bidders, or he really does want to create his own legacy with a program like ETSU. Either way, sounds like he wants out of Las Cruces.

If Chris Jans were to leave I am sure that he would let NMSU know about some valuable replacements. I hope it does not happen, but he has done a lot for the program and I wish him well regardless of his choice to stay here or leave. As long as he is not like the traitor who announced to move to twitter before he even told his players....

Not sure how familiar y’all are with Johnson City... but it’s part of the tri-cities area with Kingsport and Bristol TN. Close to the NASCAR track.

Anyway JC is know for good barbecue. And biscuits and gravy. Country fare. No fancy Mexican authentic cuisine. They’re an hour or so from the Smoky mountains and Jans will be well positioned to recruit out of TN, VA, and NC (all very close).

It’s a nice town. I live in TN and go there for conferences once a year.

There are a few "fancy" Mexican food restaurant; not many. The best Mexican restaurants in Las Cruces are hole in the wall places; which the locals frequent. The fancy ones are for the tourists. The reason Mexican food is good in Las Cruces is because of the accessibility of authentic Mexican food items (chile, tortillas, tamales, and cooks) in the region. Las Cruces has a lot of Mexican food restaurants, so all the current ones have to be good to draw in customers or the customers will simply go to another restaurant down the road.

He was just on a local sports show here yesterday. Sports radio in Phoenix is a joke and hosts are lapdogs for whoever they get on air, so not a single direct or indirect question about his 7 years at or departure from GCU. At Daniel's request, I'm sure.

I just found a link to the interview for you and realized they didn't even acknowledge him as former GCU head coach. Dan really needs to either start singing and change his name to "Petty LaBelle" or start racing cars and change it to "Richard Petty" (you can call him "Dick" for short).
