Stats will always win out for those who are so inclined, because they don't believe in the unquantifiable, but reality is that human factors exist. Surely you have experienced times in your life where your state of mind (tired, stressed, overwhelmed, confident, overconfident, nervous, excited etc) has effected the quality of your output.
I agree that the problem is that people want to believe things exist but that are unquantifiable.
For a heck of a long time people believed the world was flat (Kyrie Irving might still believe it).

I am sure it is quantifiable... just nobody has figured out how to quantify it yet. Maybe if we made players wear heartrate monitors 24/7, submit to daily hormonal panels, hook them up to machines to track their sleep every night, and take daily MRIs to capture their muscle composition, we could have enough data for Einstein or AI/ML to figure it out with a lower standard deviation. Otherwise, the coach needs to use his unquantified knowledge of whether or not his team is likely up for a risk or whether it is better to play it safe at the time. The problem with stats, much moreso in football, is that there just isn't enough data in a 10-12 game season to establish any meaningful statistical significance without a standard deviation so large that it becomes a crapshoot anyway.

The will of a team to win or the team's ability to impose their will on their opponent is one of those intangible things that cannot be measured. There is a reason team's employ, at great expense, sports psychologists.

Dude, you are pretty smart. You cannot seriously believe that there is no psychological element related to performance. That is just pure craziness and a complete denial of science.
