So would this affect Title IX? In other words, would GCU now need to have another female sport to help balance out the men's hockey team. Or is being division one for hockey still not quite the same as an NCAA sport?

If I am reading it correctly, they will be moving up to Division 1 in club athletics, so should require no change in the varsity level sports.

Yah, no, no issues. This is club, and completely independent/different from NCAA.
