Considering App is coming in on a Tuesday...attending Chef's Inn on a Sunday seems like a bit of a problem. However I can assure you that their food on Tuesday and Wednesday just is good as it is on Sunday. Beware though...they are only open for Breakfast and Lunch.
I think a lot of the best food options is going to be tempered by when they are looking to eat. It's not as if some of these places stay open late during the week.
Also worth passing along that Jonesboro traffic at 5pm on a Weekday is a nightmare when there's not a football game. Its twice as bad when there is a game. Wherever you are coming from, be prepared to budget longer for travel than expected, and with the new convention center project taking up most available parking, be prepared for a long healthy walk...It's good exercise.

For local fare downtown will really be your best bet-Skinny J’s, brickhouse, N’awlins, Omar’s, Eleanor’s, Creegans etc
Red wolf boulevard will be home to your run of the mill chain restaurants (chili’s, red lobster, longhorn steakhouse, Olive Garden, slim chickens, tacos 4 life) although there are some good local selections along that stretch (Sumos, Japanese steak house, tj’s Burgers, US Pizza, wings to go, 1812 pizza company)
I also enjoy Sully’s Chicago style restaurant-it has quite a bit of TVs, pool tables and darts-that’s situated on caraway rd
I guess you could say Tacos 4 Life is an Arkansas chain as they are only in Arkansas.
Tacos 4 Life is also in Texas and NC and will soon be in Tennessee. They are headquartered in Conway. Slim Chickens is another chain based in AR, but are located in many more states, plus the UK and Kuwait.

You, Winston. I'm not dogging them. If it's what you like good on you. I find nothing exceptional about what they do. That said, folks in Arkansas seem to really like it. I think it's because most folks have not experienced more authentic food closer to the real hispanic food.
I traveled a lot in a previous job. Part of my job was entertaining clients. Something I wasn't very good at BTW. The clients drug me to every weak azz tex-mex place in the southwest. Most of it was dog food. But on the rare occasion I'd hit an authentic Mexican food place that had fresh ingredients. Those were a pleasure.

Exactly. T4L has no interest in being "authentic" if they were a bit more upscale, people would be raving about their "fusion" cuisine".
You want authentic, go to Tacos Don Richard on Nettleton. Dang good tacos but doesn't stop me from liking the Korean Beef tacos at T4L.

They are to tacos as a lot of places were to burgers during the mid level burger joint explosion a few years ago. You don't want Taco Bell but you don't want to do a sit down table service place either. They are not supposed to be "authentic" but their spicy chorizo taco is damn good.
Plenty of little taqueria places in central Arkansas if you want authentic tacos. A lot of Jonesboro/Saline County folks probably wouldn't step in one but they are all over.
