Here's the thing. Nobody will know anything until the lights come on and they get out on the field when it matters.
Practice isn't going to show much. Only the coaches know what they are looking for in the practices. You can chart practice numbers all day long and it's just not going to tell you much.
Some guys are terrible practice players, but great when the lights come on for a game. Some are great practices players, but awful when the lights come on for a game.
Also it's a practice there isn't much going to be shown except for the basics that even the average QB could do.
Ok, so what are the reasons successful coaches like Saban close practices and restrict media access? I think it is more than just paranoia or it does not matter.
Again, I fully support media access and Norvell allowing it at Memphis. However, I think there are disadvanges (like there is for nearly all options).
I would put Norvell in the "successful coaches" category. In fact, when it comes to offense, I would offer a theory that Norvell is MORE successful than Saban. Saban is the best coach out there. But Saban does it with overwhelming talent and an unbelievable defense. His closed sessions are way down the list of factors contributing to his success.
Our open practices have not provided opponents what they need to stop our offense in the first 2 years. Why would it be different now?
I think it is more of a potential issue for the first two games. By the third game, there is actual game tape to review against quality opponents.
Nevertheless, I place you in the “no disadvanges” camp and you may be right.

I agree that Norvell recruited White because he thought White was better.
I just hope Moore beats him out when the competition plays out on the practice field.

Not really. The QB in Norvell's system is to deliver the ball to playmakers and not make mistakes. That makes short, accurate passes more important than long ball accuracy. That puts a heavy lean towards White being the starter.

It seems true and it seemed that Ferguson could have helped us by running at times. The stats sure don't show it though.
In 2 years as OC at Arizona State qb's had:
* 356 yards rushing
* 7419 yards passing
In 2 years as HC at Memphis qb's had:
* -1 yards rushing
* 8018 yards passing
Totals are:
* 355 yards rushing
* 15437 yards passing

You couldn't be more wrong. If Moore was going to be the QB, White wouldn't be here. We already have 4 QBs, White wouldn't have been necessary.
Instead, he brought in the highest rated QB Memphis has ever had and the #2 pro-style QB recruit in the nation. You don't do that to be a backup and provide depth.

Moore’s overall passing skills are not good enough for our offense.

I agree but after week one everyone will see who can do what.
Everything right now is very vanilla. The team is doing basic plays and will not get into what they will be actually running until the last two weeks before season and even then a number of things will still be left out.
All they are getting right now are coaching tips on drills and how to run a practice.

White is a good scrambler too. The value Moore brings is as an outright runner in the RPO. Moore has been very inconsistent throwing the ball though. Many people are pulling for Moore since we've gotten to know him. But White can be good when he's healthy.
I just hope this isn't turning into a #freepianoman experience.

The situation is similar, but not the same (IMO). Fuente built for the future by starting a raw but talented freshman over a more experienced and mature fifth year senior enjoying the confidence of his teammates. In contrast, there is less disparity between White and Moore.
I am confident Norvell will work it out to the optimal outcome.

You apparently haven't been to a practice. This is nowhere close to vanilla, nor are we lacking most of the playbook.
Summer workouts brings the new players along. Very few people enter during Fall Camp anymore. They really hit the ground running now. This is reload, not rebuild.
