That's a shame. Soft-shelled crabs rank right up there with lobster for me.

Speaking of Breaux Bridge, Henderson, and soft-shelled crabs......one year I was tearing up the blue gills or bream (we prounounce it brim) at Henderson Swamp. Back at work one of my employees mentioned that he and his wife loved them fried so I offered to give him a batch. He declined the gift but said he'd do a swap......a batch of big blue gills for 2 dozen soft-shelled crabs. Almost broke my arm shaking his hand to close the deal.

Turned out he had family down around Houma who were in the business of raising soft-shelled crabs and selling them commerically......12 to a pack, each individually wrapped and all the same size. Oh yeah.
