BIG donors? Probably not an issue. Looking at the nature of BIG donors, they tend to be educationally oriented, not really needing special seating. There's still the loges.

Wonder what their cut-offs are for seats sold at high price versus seats filled and more concessions?

I agree with the "fill-them" approach. Better in the long run, creates more fans of the University. That means more donated money. Or possibly run a ticket commodity for those higher priced season tickets purchasers, that they'd get a portion back for any ticket they're not going to attend that the University can resell. So if someone for example buys a general admission and there's lower bowl seats available, they can go to a window or an app and "buy-up" for a modest fee. Win-win?

A ps to my post: if the University could develop a working commodity app for tickets, that would be a system they could resell in and of itself. Though, it makes such sense to do, I have to imagine it's already being done by someone, somewhere.

You can buy lower bowl seats. You used to not be able to do that without being a donor. Sideline seats require a larger donation or can be bought for $36/game. Corner seats which require less of a donation can be purchased for $20/game.
