Does anyone know if the coaches have the depth chart out yet?

Who knows. We don't even have an updated roster.

Yeah this is one of my big question marks. Do they even know who's going to be starting yet?

Not knowing who the starters are today, IMO, is a not a bad thing. When you have many players fighting for the same position, that's good. It means the Bucs have a lot of good players and that translates to good depth.

I think, could be wrong, the coaches have till the fifth game to declare redshirt players. Coaches will take their time in trying as best they can to find the best two deep at each position. You don't won't to lose a year on redshirting or burn a year of eligibility with a quick judgement. Remember, the true freshman have only had 13 days of practice, plus three scrimmages. A lot can happen with another full week of practice.
