Watson did exactly that against Georgia the week after Hack got hurt against TCU.
We came out in the T formation and ran options and misdirection plays the entire first half.

Managed a whopping 13 points. Three of those after an interception on their end of the field and managed 7 yards on offense.

Believe me, I'm not defending Watson, just pointing out that you are giving him too much credit
