I wasnt there, but the red helmet covers are usually used when they are working on special teams. They have to do that because there are offensive and defensive players on special teams, so jersey color does not mean anything.

All the beanies mean is that they're on special teams. Owens typically had 1st team in one color and 2nd team in another color, but it might be different now, since he's not doing special teams exclusively anymore.
