I prefer it prepared in a mesquite smoker, with a spice mixture I've concocted rubbed into the meat prior to putting it into the smoker. I cook bison and elk this way, and I figure it will work for steer too. After an overnight in the smoker, it's ready to eat - and finger lickin' good...

I still think this surrounded by West Virginia fans in a Texas tailgate area would look impressive on TV.
