Middle hitter and middle blocker are the same thing. Matthews has has far more attempts than Anota for two reasons: (1) she plays in over 80% of the match action whereas Anota splits time relatively evenly with Shaylee Shore, and (2) Anota is have a sub-par season.

I'm not saying Matthews doesn't deserve POY (as I do believe that Nicole overall season has not been quite up to snuff with her last 3, though she's really come on strong of late), but it's not because of her much higher hit%. BTW, despite playing much less time, Anota is averaging more blocks/set than Matthews; whereas Nicole is averaging a double double with kills and digs. Nicole is a superior defensive player than Matthews, and that's an important part of the game.
