Although it's probably realistic for a bounty hunter turned Daimyo and have those types of self doubts, I imagine it's also taken some of the luster off his fan fave status even though he had such limited roles in the films. In this role, he's not quite the badass he was perceived to be as a bounty hunter.

Personally, I never understood the fanfare about Fett, so I have no pre-conceived notion about what this was supposed to be. So, I'm not disappointed with it. I've mostly enjoyed it, but having now watched this first season, I think there were much better characters in the SW universe to center a show around. I actually think it will become more interesting if we start to see how the First Order begins to become into existence creating havoc. Since they've tee'd it up is this where they're going to show us how Luke continues to build on his training effort? My hunch tells me no. It's a pre-amble to the Ahsoka series where I suspect she will help Luke attempt to train the next generation of Jedi - which hopefully we get a return of Grand Admiral Thrawn and his attempts to thrwart Luke and build a new Empire.
A. Fett- If you look at the Clone Wars, Fett was a kid so he grew up raised by Bounty Hunters trying to learn, he really never had a family. He was in his prime during the original trilogy time line. He learned of family from the Tuskens. Seeing them slaughtered more or less messed with his mind but also softened him in his old age. I think what this show did was tee up a series where we see Fett start bouncing around and trying to right the wrongs he once was a part of.

B. Ahsoka- I think you're partly right but I think it'll be more of the hunt for Ezra thrown in as well.
