UCF was never officially the "Fighting Knights", but the football team was frequently referred to as the Fighting Knights. True to some extent, but the program did market themselves as the Fighting Knights. Lots of print media referred the us as the Fighting Knights during this time. Its hard to call it a nickname when you print the name on your media guides as your name.
