Yes and no. Rees and Freeman were both highly thought of elite coordinators that were hired away from other programs. Both are young and both are/were considered future head coaches, and both had strong ties to their original playing schools (ND and OSU, respectively).
Notre Dame and Alabama were/are in different places, however. Notre Dame had a great stretch under Kelly, with one of his top recruiting classes ever coming in. Had that not been the case, it would have been much easier for ND to look external and hire an outside, proven head coach (not caring if those recruits went elsewhere). The current players all wanted him too, forcing their hand. ND had never won a NC under Kelly, so they were/are still desperately trying to climb that mountain.
Alabama is coming off quite possibly the best era for any head coach in history to date. They are at the top of the mountain in college football. They have the resources, history, tradition, etc. to essentially make any hire it chooses to. Knowing that, and if they were to hand the reigns over to a first-time head coach, and it stalls or falls, it would set everything that Saban has established back years, if not longer.
In this new era of NIL and more power/control than ever to the athletes, it just would (and continue to) seem puzzling for these elite programs to hand over the reigns to an unproven head coach, especially when they can basically hire away a majority of coaches to begin with.
