...I've gotta hit some TX spots, as I love brisket as well... we got on a "Sadler's Brisket" kick for a while (I'm sure there are better ones, but for "shrink wrap at Sam's Club", they are typically pretty dang good) - but the only time I've had Texas Que in TEXAS was at a VERY local joint (name is lost to time, for sure) in Fort Worth - basically a glorified trailer, but 'permanent'... our 'host' took us there, and it was awesome.

What is the place that is in a LARGE barn-like building, and I want to say SOMEwhere around Austin?

You might be thinking of Valentina's? It's in Southeast Austin off of Menchaca Rd. My sister lives in the Circle C Ranch area off of Slaughter, and that is there go to place.

If you make it to Lockhart you have to hit the trinity of Smitty's, Kreuz's and Black's. You won't be sorry and guaranteed one of the three will be the best you ever had based on your tastes.

Sounds like Soda Springs BBQ in NW Fort Worth. I used to go there in the late 80s/ early 90s pretty regularly.

cool - dang, I was probably close to that when I was out there in the late 90's (been awhile since I've hit TX... weird, as I do a lot of business from there, all 'internet-based', of course...) Is that near the Stockyards complex (which I reckon is still there)?

...yeah, not sure why I always forget Saw's - it's a bit newer, but I used to work within a mile or so of one over in the Eastwood area, and hit it quite a bit for lunch 'meetings'... perhaps the best overall in these parts, although the sauce is a touch too sweet (but can easily be 'modified' with your typical 'table' hot sauce). The food overall is great - I dig the 'onion straws'... my wife gets the sweet tea chicken sandwich - they marinate it in sweet tea, fry it and bun it... never had it (I just can never bring myself to get something OTHER than Que in a Que joint), but folks dig it.

The dude who started Saw's learned his trade in T-town, while working at Archibald's (which I have never been to - actually tried once in the pandemic era, but it was closed...). And in case you didn't know, the name SAWS is actually an acronym for the 'moniker' the founder somehow obtained while working somewhere in his early days... "Sorry A$$ Wilson"... 03-drunk

maybe... I have yet to hit the Austin area... I have just noted some interesting ones I've seen on shows profiling BBQ joints... I have heard of Circle C Ranch... I used to do a lot of plan reviews in that area - Cedar Park especially - also New Braunfels, Pflugerville, Round Rock... of course, all 'internet transmittals'... one of these years I'm heading out there to do a BBQ trail thing...

I found a great place purely by accident in east Texas 2hrs out of Dallas, it was one side of gas station at an intersection of nowhere and never been here.
They had something called swamp cabbage that was great. Couldn’t find that place again if my life depended on it.

One and done but exactly the type place I look for.

Have not had Franklin yet - not a fan of standing in line in East Austin for a long time to get my BBQ. Must be good though.

Bob Gibson white sauce is good on chicken but to me not pork

Wished I could remember or written down some of the other good que Ive had. Lots of good smokers in this world.

Used to work a few miles from the Irondale Golden Rule - hit it for 'biz lunches' quite a bit... I think it was one, if not THE first Que joints in the Ham... great no-nonsense 'old school' que...
Haven't made it to Green Top - didn't they have a fire or something recently? (one of the hazards of 24/7 smoking, unfortunately...)
I try to snag t-shirts from que places I dig... not a bad way to rep your fave joints, as it seems most of them sell t-shirts, as many are sorta 'destination / tourist' places, I guess - but mainly to make a few more $$$, duh... (and free advertising...)

I'll go to our nearby Full Moon, and it's somewhat consistent, but once in a 'blue moon', the meat is a bit on the 'fatty' side, and/or cut 'against the grain' or however it is SUPPOSED to be cut... still good, but not 'optimum'...

Archibalds is a lot better than Dreamland. Not a Dreamland fan but have only eaten at Tuscaloosa and one franchised location.
Bob Gibson white sauce is good on chicken but to me not pork
Rendezvouz in Memphis has good ribs
Saw is a good BBQ
Green Top is also a good bbq
My favorites are Golden Rule Irondale for sandwich and Cooter Browns Jville for Ribs
Wished I could remember or written down some of the other good que Ive had. Lots of good smokers in this world.

Used to work a few miles from the Irondale Golden Rule - hit it for 'biz lunches' quite a bit... I think it was one, if not THE first Que joints in the Ham... great no-nonsense 'old school' que...
Haven't made it to Green Top - didn't they have a fire or something recently? (one of the hazards of 24/7 smoking, unfortunately...)
I try to snag t-shirts from que places I dig... not a bad way to rep your fave joints, as it seems most of them sell t-shirts, as many are sorta 'destination / tourist' places, I guess - but mainly to make a few more $$$, duh... (and free advertising...)

Green Top did have a fire but I havent been that way to give a report on the current condition. Hope it didnt damage the beer coolers as they were excellent at keeping beer extremely cold.

I like Coopers in Ft Worth across street from Billy Bobs. My favorite is City Market in Luling! Off the beaten path and not fancy but man is it good. I eat at Tyler’s in Amarillo if I’m visiting my son at wtamu.

...well after a bit of google-snooping, I gleaned that they have relocated, at least temporarily, to Dora - take out only, and they also have a food truck... As most things are going, they note it has been quite difficult to get new equipment - 'supply chain' deal... but hopefully will be up and running by summer, they say.

BBQ joints REALLY need to look into installing 'dedicated' sprinkler systems around the pit areas... not a code requirement (I'm an engineer / building official by trade), but a dang good idea to keep damages to a minimum - water damage can be taken care of a lot better than structural fire damage...

oh, P.S. - they didn't mention the beer coolers... 03-drunk believe it or not, I'm a tea-totaller, so more 04-cheers for y'all who aren't... If I DID imbibe, I figure Que would be on average VERY well paired with a typical lager...
