Blast from the Past - Home Cooking because of Covid-19 - What's for Dinner?

Blast from the Past - Home Cooking because of Covid-19 - What's for Dinner?
As many have already heard, OH has shut down bars and restaurants indefinitely. However, take out/drive-thru services are still allowed - for now. My daughter works at one of the grocery stores and she said that more stuff has been flying off the shelves beyond just the earlier shortages we've had so far with toilet paper (WHY???), sanitizing wipes/hand sanitizers, regular rice (but can still get Jasmine and Basmatti) and Mac 'n cheese boxes. My guess is that people are starting their scrambles for SOME additional food stuffs in light of the bar and restaurant shutdowns. My family cooks almost all meals at home, so as of now we are in pretty good shape inventory wise, and I expect eventually the shortages won't be so persistent as people realize they have way too much of certain products.

It will be interesting to see how those families, singles and couples who don't cook, rarely cook or just got used to dining out regularly will cope with the temporary moratorium. My family eats almost all of our food at home. On average we go out to eat a little less than once per week. This won't be an issue for us.

While the bar and restaurant and bar shutdown officially didn't start until 9 pm tonight, today is officially DAY 1 of the restaurant ban. Today we made Linguine with red tomato based sauce with meatballs, side salad mix of red leaf lettuce, iceburg lettuce, grape tomatoes, diced roma tomatoes and sharp cheddar cheese (yep, not quite the theme of Italian...I know) and homemade garlic bread knots. We started with a little over a gallon of sauce prior to the 3.5 hour simmer so we have leftovers for tomorrow and will still be able to freeze the rest for future meals.

You guys making anything good while you wait out the Covid-19 fiasco? Any good recommendations for future meals? Hoping to see a lighter thread given the grave discussions going on around us - even if the whole thing is actually overblown IMHO.

Nice thread idea, as we are on 2 weeks of school lockdown in VA.

I loaded up on Eskay Beef, the crappy version that comes in the little plastic bag, like the Budding brand. Gonna make "**** on a shingle" aka creamed chipped beef, and introduce my newly minted personal landscape engineers to the joys of what a breakfast containing 2000% of the daily recommended allowance of sodium can do for them.

Well my wife's a good cook. The only thing she lets me cook is enchiladas.

But one simple thing I used to make when single was to make Kraft Mac & Cheese (using only half the butter they suggested), frying some ground beef and then putting that in with it. And if you don't mind pink food04-cheers, put some tomato sauce in with it too.

My wife and I rarely eat out. So nothing really changes. We eat typical southern fare. Meat and potatoes and vegetables and bread. Sandwiches. Burgers. Eggs and bacon.

If you're really lazy I would recommend getting an Instant Pot and learning how to use it.

She's a teacher, an overly dedicated one. Usually doesn't leave school till 5:00 and then spends 2-3 hours a night grading papers, updating her web page, doing lesson plans, etc. if she wants to not cook it's perfectly fine.

Of course. With the schools shut down for at least 3 weeks (then spring break, so a month), eating at home becomes easier.

Cooking at home has gotten a lot easier for us when I jumped to another company almost 12 years ago. I've been working from home since the middle of 2009. However, about 20% of my job still involves travel but that's currently scuttled for now. The lack of travel doesn't really affect me all that much either because we have Skype for Business and Gotomeeting apps along with the phones to still get much of everything else done. Back to the topic, I've picked up a lot of the cooking as a result of my job situation.

Tonight is round two of linguine and meatballs with the rest of it going to the freezer for another meal or two.

Tuesday I plan on making a pork roast cut from a pork loin on my Weber Kettle. I'll be using the same spice rub I used for pulled pork. It will be cooked indirect to an internal temp of 145 deg. Will probably throw in a chunk or 2 of apple wood as well. Sides TBD but most likely one of the sides will be homemade applesauce that we made last summer. I'm expecting we'll have left over pork on Wed as well.

We eat at home nearly every meal. So, this won't be anything new in our household. Why people spend so much $$ on eating out I'll never understand. Last night was baked spaghetti. Tonight will more than likely be some sort of chicken with vegatables/rice, etc.

Saturday we were lamenting the fact that with college baseball cancelled we were going to miss out on some good ole' Esso Club Birddogs so we made out own. This is a pretty good recipe, except we use larger hoagie rolls to keep the strips intact and fried the chicken breast strips ourselves.

Last night I made a chicken bog, or chicken perlo depending on which part of SC you are from. It's chicken and rice with smoked sausage, and everybody has their own recipe or cooking style. Here's one that is close to mine, except I don't use a whole chicken because of the amount of waste. I use thighs and breast strips (uncooked leftovers from Saturday night) and I do not saute the sausage, I simply cook it when I'm getting the broth back up to temp to cook the rice.

It's an easily expandable or contractible recipe, you can make it for two or a hundred by simply adjusting the proportions. We always make more than we need because like most stews or soups it's always better reheated.

I go out once or twice a week for lunch, but I also follow a ketogenic diet, so I'll just be eating in until this blows over.. Unfortunately the businesses here may shut down due to all the classes being cancelled and all the sporting events being shut down.

Yesterday was homemade Tortellini in a homemade tomato sauce...
Today I am fixing chicken n dumplings with sweet buttermilk cornbread in an iron skillet.

I am baking fudge brownies for dessert.
