When trying a new joint, I always get the main they hang their hat on. Then i get a good milky slaw, bull nuts if they have them, beans, cornbread, sweet tea, and a round of house sauces.

I’ve done most of the Texas hot spots from Franklin to Salt Lick, Stubbs in Austin.
Bakers in Dallas, Coopers in LLANO, the Lockhart shops and that nutty guy out there in Johnson City. The best in Texas, hands down, is Hutchins in McKinney. And not just because one of the partners is an SMU grad. Because it is the best....especially the brisket....better than Franklin.
As for New York it’s worth the trip out to Red Hook Brooklyn to Hometown. Or just down the road from the Barclays Center there’s Dinosaur.
And off course.... the huge old school smoker right on my deck does ribs, chicken and mozzarella stuffed, bacon-wrapped jalepenos that rule the Hamptons.
We have a Fette Sau in Philly. It's a great spot. Hutchins in McKinney is my favorite place.

actually BBQ is a type of cooking. that means it can be a verb and while I prefer pork any food can be barbecued.

Salt Lick is good but I could name 5 places in Memphis alone that are better.
Been to one...Commissary BBQ had probably the best ribs I've ever had.

From Memphis and lived in Wilson, NC for a few years. Every time I told a local I was from Memphis I got a lecture on BBQ.

I once told my uncles in Texas “If your BBQ recipe does not begin with ‘take one pork shoulder’, you have already messed up.”
In Memphis and West Tennessee, we know that cooking roast beef on the grill is not the way to make BBQ.

What kind of smoker is it?
The largest Char-Griller that you can buy at Lowe’s or Home Depot..... smoker box on the side. I removed the gas grill side so that I could keep lump charcoal heating for addition. I keep a separate gas grill. I don’t have the patience or stamina to do brisket..... ribs, chicken, sausage are the usuals.

My take on Barbeque joints-
-Coopers in Llano is way overrated
-Luling, Tx Is the epicenter for great Texas BBq
-Opies in Spicewood, Texas is one of my favorites. And it’s only 15-20 minutes from my house
-Muellers in Taylor, Tx is to die for
-ate at Hard 8 BBQ in Stphenville, Texas and was not at all impressed. I’ll probably try is again. Could have been an off day.
-Salt Lick was good in its day but no longer on my list
