Just make sure it's Lexington NC style. That mustard based stuff in SC shouldn't even be called BBQ.

Don't be a hater of mustard-based BBQ sauces...as far as I'm concerned it's very hard to ruin any smoked pig regardless of what you put on it. FWIW - I had some of the best vinegar/spice dressed pulled pork in a little joint north of Raleigh (on the way to Creedmore?) years back that almost had me swear off any BBQ sauce of any kind.

First time I tried BBQ with a mustard based sauce I almost hurled. Sad to think someone would ruin good pig with something like that.

I like all different kinds of barbecue but please tell me y'all know how to actually make Brunswick Stew correctly. No just mixing pulled pork and Campbell's Veggie soup and calling it stew.

Brunswick Stew with BBQ? I'm suddenly feeling a little nauseous. I pretty sure there is a law in Piedmont NC that states nothing but red slaw, hush puppies, fries and baked beans can be consumed with BBQ. Sweet tea, Pepsi / Coke or Cherry/Lemon/Sundrop are the preferred beverage choices. Banana pudding or peach cobbler are the only allowable deserts.

I know you didn't just say you drink Pepsi with real southern BBQ. And yes Brunswick Stew is a necessary side item if you are going to do a BBQ meal the right way. You should never eat potatoes with BBQ so potato salad and fries and chips are out. You only eat potatoes with grilled meats like burgers and steaks. Slaw, baked beans, Brunswick Stew, and the occasional fried item like hush puppies or fried okra and a Sweet Tea or Coke. Peach or Blackberry cobbler for desert 04-cheers

I disagree completely. Eastern style bbq is much superior to that sweet ketchupy mess served west of Raleigh.

The vinegar and pepper bring out more natural flavors from the pig instead of smothering it like a tomato based sauce does.

I have a Kamado Joe ceramic grill that works as both. Anyone interested in a Big Green Egg I highly suggest the KJ's. And if you want one, get them at a Costco road show because you get a hell of a deal.

At some point I imagine I'll get a gravity feed smoker (Stump's/Superior/Southern Q) or something like that for tailgating. You don't just move a ceramic grill.

Do not move It! LOL. Keep on the patio. Until you get a tailgate rig your best option to end your cook at home , foil it and take immediately to the tailgate. I have a Char Griller Outlaw offset that I have modded heavily. Also have a UDS. I guess that is why I can appreciate smoked meats of all persuasions. Might do a brisket next weekend.
