So my dad is a good cook. He makes things that are just unreal. When he was 12 his father passed away and his mom had to support a family of 6 kids, so my dad learned how to cook. He also picked up tricks working the oil rigs by making friends with the galley hands.

My dad's fried chicken hands down is the best ever. He makes a homemade tomato gravy that'll knock your socks off, thing is he never writes any of this down. Sometimes you just have to spend time with him and watch him make it. The other day I was wanting biscuits. I told my wife I wanted some of his biscuits.

I'm not a bad cook. I can make some pretty edible things. In my smoke thread I mention I make my own rubs. I can do some pretty good burgers. I have a mean chili I make. But biscuits have eluded me (I know bad Southerner). So the other night I watch a few Youtube videos and think to myself this isn't hard, but I haven't seen my dad use half of this.

So I call him. We make small talk. I said hey I want to make some biscuits and yours always turns out good, mind sharing your recipe.

He says, I don't have a recipe. I said ok, what all do you put in it and I can figure it out (it's how I figured out the pimento and cheese conundrum). He starts laughing and says, this recipe is my best kept and worst kept secret. I said OH?

He makes his biscuits by using the recipe on the Bisquick box. Every now and then he may pour sprite in it or add sour cream or salt. But yea that's it.

Reminded me of the episode of Friends with Phebes' cookie recipe.

Never been impressed with Popeyes biscuits. The one’s I’ve gotten are small and hard. Bojangles are light, fluffy, and golden brown.

Popeyes biscuits are currently no where near where they once were. After bankruptcy, the personal touch Al Copeland ran his store with, is long gone. It's all corporate now and corners are cut.

I am fortunate, I have both Popeyes and Bojangles within a few minutes of me. Sometimes I just need a greasy fried chicken fix.
Rig cooks aren't what they used to be. I was fortunate enough to be on a couple of rigs with fantastic cooks that gave us great tips especially if you were cooking for a large group. Now I understand that most of the companies are just getting low grade meats and such and many of the "cooks" are just guys that know how to warm stuff up.
As I read the story I was thinking of Friends and Nestle Tollhouse. Lol.
Don't forget Screech's Spaghetti Sauce.

Not unique to Popeyes but it all depends when they're made. If they were made earlier in the day (or yesterday) and have been in a warming oven all day, they're dry and hard. If they were made fresh, they'll be amazing. Sometimes you can just ask the girl behind the counter to get you a fresh one and she will.
