I'm just curious, how many (and who are they) colleges have Skiing?

Skiing should not be a NCAA varsity sport. Nothing wrong with club teams, especially for sports of low interest.

That's why I'm usually OK with lower cost individual sports. But then again, only if the Olympics are the ultimate competition in that sport. So, golf, tennis, bowling, no. Track, wrestling, yes.
Team sports, yes yes and yes.

Skiing fits the criteria I gave a while back:
Is it something you alone (or you and your roommate) can go and do without an organized "team"? Examples:
- swimming
- tennis
- golf
- bowling
- skiing
- running
Varsity sports should be sports where you need to draw a team from the student body. Examples:
- basketball
- volleyball
- hockey
- baseball/softball
- football
- lacrosse

So your saying T&F and Cross Country should go the way of club sports? Not sure anyone would agree with you.
Bowling? Yes get rid of it. Tennis? No problem seeing it go away. Skiing? I think XC should stay, not so sure about Alpine which has a lot of other organizations, amateur who already offer serious, more serious then University sponsored.
Running, swimming and golf are, and will continue to be mainstay sports in the NCAA. Only a small percentage of NCAA D1 institutions do not have T&F and XC teams. Same with swimming and diving and golf.
If we begin to talk about getting rid of sports which very few schools offer at the D1 level. To the point where that sport needs to dip down to D2 and D3 to ensure enough schools are participating. That would mean hockey is gone. I don't think many UND fans would be ok with that.

The addition of beach volleyball tells me that the NCAA isn't doing away with sports based on these criteria. I don't think skiing is going away anytime soon.
