I've checked about a dozen websites and the only ones listed are:

Baylor
North Texas
at TCU

With eight conference games, that's just 11 games. What game am I missing?

That's a rough schedule for a new coach, even without the 4 OOC game.
I'm sure we will add a cupcake, but yea we will almost always have TCU and an old SWC rival (for attendance) in OOC. The Univ North Texas series is new and runs for a while - no reason we shouldn't constantly be 2-2 in OOC and sometimes 3-1.
Looking for a FCS home game

That's wise, although it's hard to get excited about.

I'd prefer a MWC opponent. As just a regular fan, I'd like to see the AAC schedule more with the MWC. But I'm sure I'll get a lot of criticism of that. The ideal OOC schedule:

1) TCU
2) North Texas
3) a rotating spot ... a MWC school in even years, a P5 school in odd years
4) FCS

There are some P5 schools scheduling two FCS schools this year. WTF?

any word on who that is yet?
none so far
I talked with an SMU athletics employee a few days ago. Pony94 is correct, we are looking for a home game against an FCS team. Apparently our season tickets are priced to include 7 home games so we will not fill that hole with an away game of any sort.
any rumblings who the FCS school may be

Well for the western wing of the AAC, the MWC games make sense, but I'm sure that UConn and Temple would rather have eastern opponents...
