If Notre Dame decided to join the Big East for football (wanting to rule a conference like the Longhorns maybe, I don't know), would the current BE members stay and not leave for the ACC and Big 12?

If they didn't join the Big East when Syracuse, Pitt, and WVU were there, then they won't now.
I don't even know if Notre Dame would be enough to hold this mess together. I could still see teams leaving, even with Notre Dame in for football.

It wouldn't matter, if Notre Dame joined the Big East would have an automatic BCS bowl tie-in.
