It's a nickname for an Agricultural school I believe.
NMSU used to be New Mexico A&M, yes an agricultural school. At one time, and it still may be the case, NMSU was the largest land grant university in the nation(in square miles). Our mascot is a pistol pete type character(sort of an Cowboy character).
btw...can someone add an Aggie icon among the otherones below?
