Full Version: Good Tailgate Recipe

This would be good for tailgates, or just to have around the house.

Buy two cans of chicken (Tyson, Hormel...whatever. Can be found in the tuna aisle of your grocery store) and a container of Philadelphia Cream Cheese. Drain the juice from the chicken cans, then put chicken in the bowl. Put the cream cheese in a bowl, then mix the two together with your hands.

Start off with 5 Pillsbury biscuits (More for a tailgate) and flatten them out, one at a time. Take the chicken/cream cheese and put some in the middle of the biscuit. Now fold the biscuit from top to bottom, then left to right (or right to left) and pinch the ends together and fold them under so they won't come apart in the oven.

Heat them at 375 degrees for approximately 15 minutes, or until the biscuits are done to your liking. AWESOME stuff!!!

You can cut the biscuits into smaller pieces before you place them in the oven and make miniatures. This whole process takes about 25 minutes and it is well worth it!! The leftovers are good on crackers.

If you decide to use it at a tailgate, you will have to experiment with the amount of chicken and cream cheese you use.

I'm no Emeril, just thought you'd like it as much as we do.

This is a great idea for a thread... what are everyone's favorite tailgate recipes/beverages/supplies?

I'll have to look up our recipe for cheesy broccoli rice casserole... it's a family tailgate favorite!

Other favorites:

-Just about anything grilled well (over charcoal, of course!) and smothered in Sweet Baby Ray's BBQ sauce.
-Mrs. Kemo's seven-layer bean dip
-Entenneman's Cinnamon Apple danish (for those breakfast tailgates)
-Chocolate-chip coconut cookie bars

Beverage selection (varies by game weather condition)

Hot weather game: Bell's Oberon Ale, Goose Island Summertime Kolsch, Sierra Nevada Pale Ale, Magners Cider

Mid-season: Mimosas, Goose Island Honkers Ale, Berghoff, Samuel Adams

Cold weather game: Hot chocolate with Baileys, Guinness, Cabernet sauvignon

And always have plenty of bottled water and juice on hand...

Place fresh corn in boiling water. Cook until tender. Butter and salt to taste.

Simple but yummy:

Redneck Fondue

3 lbs. Velveeta cheese

2 lbs. Neese's Hot Sausage (browned)

2 or 3 crusty baguettes (sliced)

Combine cheese and sausage into crockpot. Heat. Dip bread slices and eat. Feel cholesterol level skyrocket. Repeat.

Whoa! I was trying to find a smilie of a guy having a heart attack, but that does sound pretty good. Now THIS would be a thread worth keeping alive until kickoff for Week One. Good idea, guys!

4. repeat steps 1,2, and 3 until you can barely stand
5. go into the football game
6. leave at half-time and re-do step 4 and 5
7. leave after we beat whomever we're playing.
8. redo step number 4

Unless the Knights are in DeKalb, then you skip step 7 and move directly to step 8, adding: "step 9 - repeat until you can't stand or walk and cry "WHY!" over and over."

Speaking of heart attacks....I've seen many variations on this "various sausage' feast, but I'm pretty fond of this recipe which is called "Bears/Packers tailgate stew".

Getseveral jumbo hot dogs, bratwurst, itallian sausage and even cheese filled sausages. Put them all in a big stock pot. Then pour in a few beers, 2 chopped onions, tablespoon of black peppercorns, and some salt and ground mustard. Put the pot on the grill and cook for about 25minutes.
Meanwhile either use an empty soup can, or make a tin foil pan. Fill them with chopped onions, red and green peppers, and mushrooms. Throw in some butter and cook until soft.
When the meat is almost done, remove the pot and then take the sausage out and finish them on the grill so they get a nice char. Then toast the buns, and have sausage with all the fixings.
Before you start the meat, start the side dish. All you do is cut up several potatoes in slices, preferably red potatoes. Put them in a tin foil packet with chopped onion, fried and crumbled bacon, and some more butter. Fold the packet closed and put right on the coals. Turn every 10-15 minutes. takes about 40 minutes.
Also peel ears of corn. Rub the outside with butter and salt. Then wrap the corn in tin foil and put right on the grill. Cooks in about 20 minutes, and ready to eat. Butter cooks right into the corn.
My recipie for week chilli:

ingredients
5 small cans dark red kidney beans
3 cans whole tomatoes
1 yellow onion (not those sweet Vidalia things)
2 red peppers
1 yellow pepper
1 green pepper
1 stalk celery
1 or 2 jalepeno peppers (depending on heat preference)
1 pound ground beef (ground turkey can be substituted)
1 can of beer
2 Tablespoons butter
2 Tablespoons chili powder

Stick's Tailgate Eggnog

Put 3 ice cubes in a Marshall Stadium cup. Pour Crown Royal over ice cubes until tops of ice cubes are covered (about three fingers). Pour eggnog in the gutter drain. Repeat as necessary.
