I think that like everything else, what makes a great tailgating spot is what appeals to you. Personally, I love my spot in Hannon Park behind Yager Stadium, in part because it's not a huge mob scene -- instead, it's a friendly, intimate setting under a canopy of trees, backing up to the gently flowing Talawanda. And it's still less than 200 yards from the stadium gates.
Besides, we get visits from these lovely ladies....
But back to my original point, I'm not saying my spot is necessarily better than any other spot...it's just that I prefer that kind of setting.

I didn't know Miami fans tailgated before a Drag Queen burlesque show. Some of them do look passable :) Just teasing.
I'm a firm believer that the fine gravel of the lots outside of Perry Stadium is the perfect surface on which to tailgate.

I have to agree with Red Steve. I tailgated at his spot the day MUvMU I ( I think) It is a great spot for tailgaiting.

I don't know who has the best, as the only way I can categorize the ones I've been to is mostly based on how friendly the folks are.....of the MAC tailgates I've been to (at away games) I liked NIU 'cause they have a nice field behind the stadium and the fine folks in DeKalb are really friendly (even to a guy in Miami colors!). BSU's tailgate is not as scenic (blacktop behind the stadium, at least where I was), but again, there is friendly banter and a nice family atmosphere. CMU's used to be on the parking lots south of the stadium.......but again, I enjoyed them and for those of you that are used to CMU being lousy, when they are winning it's pretty rowdy in Mt. Pleasant.
The wildest pre-game tailgates I've been to in person are at Ohio State and LSU.....man, at LSU it's a "art form" with great food, etc. OSU is a beer-soaked party. NW has some great family activities there (tent with kid's games, etc. with Goose Island Brewski's for the adults), and the folks there are friendly (and probably resigned to losing to Miami when we're in town I guess). Enjoyed being in Evanston alot. I was in a RV at MSU when we played them.....like all B10 teams (outside of NW) there is no respect for a MAC opponent, so you don't see that much passion. (although we only lost to them by a point as it turned out).
To be honest, I have never had real problems at an opposing team's game, but other than wearing my Miami cap I have never tried to "get into it" with a fan of the opposition. The worst language I've heard is mostly at OSU and WVU games I've been to.......
