Watched the Last Vegas Bowl this morning.
I had forgotten that inspite of being undefeated
and Top 25, the Rockets only placed 3 players on the
All MAC teams -RB Tait, TE Rosi, and DL Haynes.
Also the OLB's were about 6' 180-190 lbs.

That was a very good team.

That happened a lot in the Pinkel years. Not many of his players made it to the NFL compared to what has happened since - and some of that could be due to the expansion in the number of teams in the NFL. Also speaks to how well they performed as a unit. Once Marshall joined, they consistently had about 3x as many guys on the all_MAC team as UT - and put a lot more in the NFL. They paid the players better. But, they couldn't beat UT in the Glass Bowl. They just got to play a whole lot more games in Huntington.

Was that team somewhat undersized?

That was a good Miami(8-2-1)team that tied UT.
They gave up a total of 2 points for 4 games.
Had a very good road win at Northwestern(10-2).

The team with Rosi so maybe that bodes well. Any little Taits running around?
