There are over 100 NCAA recognized rankings, just one will have the NCAA recognize UCF as the rightful champions.

There are a set of polls (human and mathematical) recognized by the NCAA as determining A national champion at the FBS level. The results of the CFP, AP, and coaches polls are 3 of 13.

not all of them are major selector polls for the purpose of officially claiming a national title that the ncaa puts in the records books.

edit: sublime mentioned the 13 number. ucf will probably be #1 in 2 of them.

I think a trophy with 2017 MCubed National Champion will look great in the case. Better put a football on it or the next generation will think it was for something like competitive cup stacking.
