Found a nice link on Scout with the most unique mascots from each state. Some of my personal favorites:

Aniak Half-Breeds (Alaska)-- Can't believe that has not been changed in today's environment. Then again-- it's in Alaska.
Yuma Criminals (Arizona)- See above
Laurel Hill Hoboes (Flordia) And another
Cairo Syrupmakers (Georgia)- I like this one. However, I figure it would be a school in Vermont.
Frankfort Hot Dogs (Indiana)- I am guessing they have some nice promotions in the concession stand.

Wow, I think that actually rivals Sandites. We get asked what a Sandite is a lot so I know how this feels...but what is a PamPack? lol

My dad was in the military so I spent the last two years of high school at a Department of Defense Dependent Schools. Our mascot was the Hadites.

I went to school at schools run by Dayton Independent School District in Dayton, Texas. The district colors are purple and white.
Stephen F. Austin Elementary (at the time I went, preK-2nd) - Broncos
Dr. E. R. Richter Elementary (at the time I went, 3rd-5th) - Broncos
Colbert Elementary (at the time I went, 6th; also the former high school for the town's black population before desegregation. They were known as the Tigers.) - Broncos.
Woodrow Wilson Junior High (again, at the time I went, 7th and 8th) - Ponies. (This is the only instance where Broncos isn't used in the entire district, but still a variation of the overall horse theme.)
Dayton High School (9th-12th) - Broncos.

College:
Lee College (Baytown, Texas) - Rebels (Named after Robert E. Lee.)
University of Houston - Cougars

The students also used to cheer "Hork! Hork! Hork!" at their athletic events...which has also apparently had the kibosh put upon it.

The best one happens to be in WV: The Poca Dots.

Elementary: Pike...yes, like the fish. (consolidated w/ another district, no longer exists)
Middle: Cougars (consolidated w/ another district, no longer exists)
High School: Hatchets (Bad Axe High School) and we competed in the Greater Thumb Conference...I kid you not.

Undergrad: Bearcats (Cincinnati)
Grad Degree #1: Wildcats (Northwestern)
Grad Degree #2: Spartans (Michigan State)

However, my favorite of all time is a small university in Russellville AR. The Arkansas Tech "Wonder Boys". I'd like to go to Russellville once just to see how the "Wonder Boys" take the field.
