Eastern style (denoted as vinegar and pepper on your map) is whole hog BBQ (the whole pig is cooked).

Lexington style (denoted as light tomato on your map) is pork shoulders only. This style of Q is centered around Lexington NC, which is where the annual BBQ festival is located.

Eastern style is traditionally served with cornsticks while Lexington style is usually served with hushpuppies.

All is fine with me. I am curious about the 'Bama white sauce Q. Never had that. I have to say that I am not a huge fan of the sauce overtaking the Q.

i agree...do you primarily do the mustard based?

The best pork ribs I ever had were in Memphis (Commissary BBQ).

Texas rules in Brisket...around the Hill Country area. Had awesome cabrito in Llano, TX at Cooper's.

I'll be driving through SC...is Maurice's decent? Will be on a time crunch...so I'll want to grab some next to the freeway?

First time I tried it was when I was in Alabama on business. I was pleasantly surprised with it. It's evidently just used on chicken, and what I had was pretty good.

I do both mustard and vinegar/pepper depending on my mood and the audience. If I'm cooking for a large group it tends to be mustard sauce because this is the region the mustard sauce originated from due to the German influence.

Maurice's wouldn't be my first choice but it's serviceable. I honestly haven't ate at any of their places in probably 10 years. Maurice himself died three years ago and it's now run by some of his kin so I don't know if they changed things up or not. The great thing about living down here is we have so many BBQ options. Even at our duck camp in the middle of BFE there's three BBQ joints within a 10 minute drive of our front gate.

I like buying something off the shelf & then adding my own ingredients. Around town I like Shane's for ribs, Mark's for general & Bootleg for a quick & cheap meal.

I disagree strongly with the light tomato map. Most of the BBQ in the upstate is mustard base. Mustard base is best base.

I would say follow the map. If you are in a vinegar area don't order the tomato sauce, etc.

The reason eastern NC is vinegar based and Piedmont NC is tomato goes back to geography. NC didn't develop in an east to west progression as was typical. We had shallow ports, shallow sounds and irregular coastline so most came here after first living in other colonies, sound region by Virginians looking for good soil and S Carolinians to Cape Fear looking for cheap / free land. Back then they believed tomatoes to be poisonous. By the time German and Scot-Irish from NJ and Pennsylvania started coming down the Great Wagon Road in mid 18th century and populating the Piedmont everyone knew tomatoes were edible and they used it as a sauce base. Coastal and Piedmont regions had little contact since roads and bridges were almost nonexistent and Piedmont rivers flowed south not east.
