I think it's meant to symbolize tearing the building down and rebuilding from the ground up.

I had never seen a game from EMU and didn't know the field was gray. I was more than shocked when I saw it. My old eyes didn't like it one bit. Made it very difficult for me to watch the game. I don't like the blue or red fields either, but they are easier to look at than gray. Felt like I was in an episode of The Twilight Zone.
