No need to choose on the BBQ. I'll have a big rack of beef ribs with a side of pulled pork, some bbq yard bird, a couple of hot links, and maybe a brisket for dessert. :hungry:

And please keep the cole slaw off my samwich. That ain't right. I like my sides... um, on the side, thank you.

This reminds me of those special holidays when its time to fire up the pit! I just can't help but BBQ the way I was taught - in layers and courses!

Start with the trimmed out briskets on the bottom, with the fat trimmed off of it on top of that, then split the chickens and lay those on next, with various, preferably spicy, sausages (pork, beef, venison, whatever you can scrounge up!) on top of that. The ribs (beef and pork) go in their own rack standing up on the side. Crank up the firebox on the side with a good pecan wood fire and let the smoking begin! Sausages are ready about breakfast time. Chickens, sausages and ribs for lunch. Briskets and ribs for dinner. Leftovers into the freezer to be nuked when its snack time in the upcoming weeks.

Of course you have to have beer to got with that lunch and dinner. Cheap beer makes a good marinade too!

I'm getting hungry and gaining weight just thinking about it!

And yes, you must have the firebox on the side. If you have flames under your meat, you're grilling, not barbequeing!

As one reared in the Midwest, in the beautiful state of Oklahoma no less, I used to agree. But there's nothing better than a dab of cold slaw on steaming hot Down East pork BBQ. It's heaven.

I don't usually eat my BBQ on a sammitch, though. Just give me the pig, some vinegar, a dash of Texas Pete, an ice cold Bud Light, a fork, and get out of the way.

I've had the Texas-style brisket. Good stuff, but doesn't touch Down East BBQ.

Ah, the old Texas vs. The South, beef vs. pork battle.

Born and raised in Texas, so you know where I stand on that. I've had some real good Southern BBQ, but it's just not the taste I was raised with.

Texas folks-what are some of your favorite places? Here are a few of mine:

-The Salt Lick (Driftwood)
-Bert's (Austin)-great lunch place, try the T-Man!
-Cooper's (Llano)
-Prause Meat Market (Lockhart)
-Mueller's (Taylor)
-Angelo's (Fort Worth)

Someone help me out here, there's a place who's name escapes me right now in Kilgore with the best ribs you've ever had.

...and for you Southerners, there's a place in Marshall, TX called Neely's that's famous for their BBQ Pork Sandwiches called "Brown Pigs"

coleslaw serves no useful purpose except the production of gas, if you consider that useful.

I can appreciate vinegar-based eastern BBQ pork, although I haven't had it in the Carolinas. I understand it's different than Tennessee bbq, which is what I've had. It's good, no question, but I was raised on KC and TX style BBQ, so that's what lights my fire... or starts my grill, you might say.

And I'll even concede this -- perhaps cole slaw tastes good on eastern pork BBQ because the flavors complement each other. But it tastes like absolute crap on KC or TX bbq. That's like ordering a $50 filet medium-rare and then slapping ketchup on it. yuck.

But I don't care who you are, where you're from or which style of BBQ you like, I think we all agree that you gotta have a cold beer (or 5) with it! 04-drinky
