It could very hell have been an honest mistake, or it very well could have been an intentional jab at the stereotype of mexicans being illegal immigrants. I don't really think an apology or response like the school gave was really necessary, but it's a student event at a college. This sort of stuff happens all the time because if 15 people complain about your event that usually has 30 people go to it, you'll change it. Not because it has some ideological value to it, but because there goes half of the people that might show up. Same with the Michigan movie. Ask the average student, they weren't going to go regardless, which is why they changed the movie.

Stop making mountains out of molehills, on both sides of the aisle.

Neither is Mexican food. Just because you and a small minority are 'triggered' by a tenuous association doesn't mean that should be the basis of ruining everyone else fun. The paradox of decency is that we've got to have a little allowance for things that we personally might not agree with/find offensive.
