Yep TJ. I've seen the extra rack. They are just a really good grille.

Forget about smoking. Sous vide is the way to go. Cook a steak in a water bath for a couple of hours and then throw it on the grill to char for a few minutes. Any kind of meat or fish does well in sous vide.

Sous vide is a completely different type of cooking. It's incredibly useful in many applications, but for smoked ribs or pulled pork? Not so much. Steak. scallops, eggs? Absolutely.

Do you have a water circulator? I've got the Anova (the first model). I had a SideKIC for a time, but at this point it's practically a dinosaur.

I tend to heavily inject pork butts with a pretty good mix of Worcestershire, apple juice, apple cider vinegar, water, sugar, salt, and some of whatever rub I'm using. It makes a pretty substantial difference in the end product in terms of getting flavor pretty deep into the meat.

One of the things that I've found that's really made a massive difference is wrapping the butts in foil to rest for about 2 hours after coming off the smoker. After the rest, once you open the foil you'll have a good amount of juice at the bottom of the foil. Save this! Once you pull, mix some of the liquid into the pulled meat. It really keeps things juicy and flavorful.

This liquid should be saved in the fridge for leftovers - it actually turns into a gelatin in the fridge. This "pork jelly" can be mixed into the meat before reheating any leftover pork. Or, like mairving mentioned, if you have a sous-vide circulator, you can mix some of the jelly into a vac-sealed bag of pulled pork, put in the water bath until warmed, and then open and mix together. Good as the day it was pulled.

I can only comment on what I have. I use the Weber Smokey Mountain Smoker and love it.

I have always used a Weber grill so I am a Weber fan.
