There are bowl opponents and legitimate Top 25 - 35 teams. I'm not sure how any schedule that includes A&M and Notre Dame on the road can be considered amongst the easiest in the country.

That's a key point. I don't think using the average rating of your opponent is meaningful in a 12 game season. Rather, a rating that looked at how many games where Rice is at a huge disadvantage (2), how many games that suggest parity (4-6), and how many games have Rice at a huge advantage (4-6).

You could draft a far easier schedule with a .430 winning percentage and four bowl opponents.
