Fish Fry recipe from a Marina I worked at..used many times @ home.

Take the fish of your choosing (usually speckled trout for me)
Cut fillets into nugget-cube sized pieces. About the size of a Chick-fil-a chicken nugget.
Place nuggets in zip lock bag coated in yellow mustard and swirl around
Pour the nuggets into bowl of fish-fry breading (zatarains will work)
Place nuggets in a wok over an open flame full of vegetable oil
Fry for about a minute or two
Take out nuggets and place in a cardboard beer flat (or any shallow flat cardboard box) coated in seasonings- McCormick Lemon pepper works nicely

Very simple, very tasty. Enjoy!

I wonder how that would work with catfish.

Works well. I know a lot of people like the same recipe with catfish but tartar sauce instead of mustard. I'm not a huge tartar sauce fan but it's delicious if it's lightly coated in it before breaded. If you like it a lot I'd say drench it.

man I just made this with some farm raised catfish I bought. However I mixed my seasoning with white cornmeal.

It was bomb.

Thanks for sharing it. I normally just dip in buttermilk and add some cormeal. The tarter was a nice change. I going to try your mustard recipe next week. I always caught them in the creek by our house. They are bottom feeders. A net is a good method.

I'm good on the noodling but there are some places around ECU to catch monster cats. I might check them out. A few guys in my classes used to catch 20+ pounders on the river here.

One of my favorite treats:

Deep Fried Snickers


vegetable oil
2 cups flour
Buttermilk
Bacon(not peppered)
regular size snickers bars
toothpicks


In a large pan or deep fryer heat vegetable oil. If you are using a pan, make sure the oil is about 2 inches deep.

in a bowl mix flour and enough buttermilk to make a medium thick batter. You want it to thick enough where it doesn't drip, but not too thick where it is almost dry.

Drop bacon slices in the heated oil. Let fry until done BUT NOT crispy. They should be chewy.

Wrap cooked bacon slices around Snickers bar in a spiral formation and secure in place by pinning with tooth picks. Now dip bacon wrapped snickers in buttermilk batter. Use toothpicks as a handle.

Deep fry for about two to three minutes or until outside is light to medium brown.

Remove from oil. Don't burn your mouth. Enjoy.

Dixie's Slow Cooker Hopping Johns

1 pound Black Eye Peas(Rinsed)
8 sliced baby carrots(slice into disks)
I medium sized white onion diced
2 half pound ham hocks(smoked)
1 tablespoon fresh ground black pepper
1 teaspoon cumin
1 tablespoon salt
2 garlic cloves chopped
4 pieces RAW honey cured bacon(diced)
6 cups purified water

put all ingredients in slow cooker and cook for 10 hours on low. Remove ham hocks, remove all bones from hocks, shred with knife and fork, put back in pot...stir

Serve over white rice with cornbread
