First of all, sushi technically just refers to vinegared rice, although many people use it as an all encompassing term. I have a feeling you're referring to sashimi, which is raw sliced fish (or nigri if it is served on a pad of rice). Just curious, but have you ever actually tried it?

The "concept" of raw fish used to gross me out for a long time, but then I actually ate it and came to realize I could probably eat nigri every day for the rest of my life (if it wasnt so damn expensive). This dosent mean I dont like a good grilled salmon, but high quality raw fish is amazing in its own way. I even ate uni the other day, and was fairly indifferent to the whole experience.

I do draw the line at oysters, however.

Yes there is a small risk as there is in most things in life, and people have different tolerances, but that is why you go to places where you know the quality of the fish is high and that its coming in fresh (if its not, in all likelihood they wont be open long). Its certainly not the same thing as eating ground beef or poultry raw. I also try to eat only fish which is in season or isnt in danger of being overfished (for instance, mackerel is usually one of the cheaper options but is actually more flavorful than many higher priced choices, and its very plentiful). I've had raw fish dozens of times in my life and never had so much as a stomach ache. Most of the horror stories revolve around raw oysters, and it is actually fairly easy to spot a "bad" one--not only do they look dry and shriveled but usually smell something like rotten eggs.

Again, if you've never tried it before I would encourage you to do so at least once before making up your mind. If all else fails, there are still plenty of options at most joints for vegetarian rolls which are usually pretty damn good in their own right, although they are far more American creations than they are Japanese.

Can't vouch for BBQ around where you live, but BBQ in North Georgia, specifically the Blue Ridge area, is a transcendent experience. Poole's in Ellijay, Pink Pig in Cherry Log and Rib Country in Blairsville are as good as you'll find on God's green earth.

I'm a seasoned sushi eater and the only sushi I've ever had that even remotely resembles the texture of snot is raw scallops. I love scallops, grilled, fried, broiled...etc. However, raw scallops have the exact consistency of a big fat loogie. Oh and Nori one of the common seaweeds used in sushi rolls is one of the best natural multi-vitamins you can find.

As far as cooked seafood goes, I'm also a fan. I've worked in a nicer seafood restaurant all through college, however, if you're only eating fish that is heavily seasoned and or marinated you are missing out.

Here are a few things you should know...

Chilean Seabass is one of life's great pleasures, Alaskan Halibut is another.

Wild Alaskan Salmon is absolutely one of the best things a man can eat as far as what a man should get in his diet.

Peope who say that they don't like "fishy" fish are especially missing out as they've never had truly fresh seafood. The "fishy" taste so many commonly complain about is an indicator of a lack of freshness and not an inherent flavor found in fish. There are some fish that are fuller in flavor than others, but "fishy"=not fresh.

Tilapia is disgusting. Many people eat it because it's extremely mild(see: virtually flavorless) and will pretty much take on the flavor of what it's cooked with. What many people don't realize is that Tilapia are commonly farmed in some of the most disgusting settings, in absolute cesspools of their own waste(which they all eat) where the fish are packed into pools at far too great a quantity. Another fun fact, many zoos use Tilapia in their hippo habitats to keep the pools free of hippo poop.

RE: Dear South,
Tilapia is also critical to rice farming. Without tilapia, there would be no rice...

that is such bull. all fish smells like that. when i go fishing, the fish smells nasty. after we clean the fish and bring it home, it smells nasty. if you go to a really good fish store like the one we used to go to when we lived in NYC, even the store will smell nasty. just because you're a fan of fish and thus can't smell it, doesn't mean it doesn't exist.

As someone who's worked with seafood for years, I know what I'm talking about and I've had Seabass that is a day out of the ocean that was tender and flavorful and not the least bit "fishy", conversely, I've had Seabass that was not nearly as fresh and it tasted like a mouthful of ocean scum. Perhaps you just need a more refined palate.

You're more than welcome to not enjoy true delicacies like Chilean Seabass and lobster, but if Chilean Seabass was truly "nasty" it wouldn't command the same price per pound as Filet Mignon.

Got me some stone crab claws about to go in the boiling water as we speak.

BTW, Joe's Stone Crab restaurant has an awesome mustard dipping sauce for it and the recipe is on the web.
